At Home with the TIVOL Team!

During this unprecedented time away from so many we people love and care about, we want to connect in all of the ways we can.

At TIVOL, our sales associates are the heart and soul of what we do. They are out in the community, building relationships with all of you, and they are there when you need something special. But like everyone in the city, they are all at home trying to stay busy.

We thought it might be fun to shed some light on what everyone on the TIVOL team has been up to the past few weeks!  We will feature 3-4 staff every week in April!

At home with AJ Paddack -

I sure do miss everyone at TIVOL, co-workers, clients, and friends! My sons and I, and my constant companion, our Goldendoodle, Stella, are all hunkered down at home, forced to take a "pause" from the fast pace that we have become accustomed to.

We celebrated Sean's 18th birthday yesterday and basically all week. At one point in the evening, Sean said, "There are a lot of things about this "quarantine" time that I really like!" It's true. I have made so many new recipes, that now we are doing regular work out challenges because we are eating so much! We also started a Game Board Olympics! We get points for first, second, and third places...and pre-selected prizes for the end. We are all quite competitive. It's hysterical!

My yard is reaping the benefits of my extra time. Although my aching back is telling me that I will not complain in the future for how much it costs to have mulch laid around my house. It's totally worth it!

Kansas City is so lucky that we've had springtime greet us at our homes during this COVID experience. It's great to see so many neighbors and families walking, running, and biking. I even saw a man fishing, and as I ran by him, I thought, "Now that's a nice way to enjoy your solitude!"

At home with Amanda Thompson -

Our 8 and 3 year olds are keeping me busy throughout the day, as Casey works as an acute behavioral therapist in Kansas City. When we are not doing online learning for our son's grade school, we love to play board games. We are also in the process of updating our new home we purchased in July. We're also planting fruit trees, and enjoying time in the yard.

We're definitely cooking more, and have been trying some new Teriyaki recipes and using the Insta-Pot for some inspiration for new family meals. For a special treat, we always love a nice cheese plate and glass of wine.

I've been loving this very simple phrase lately: "Love one another"

We have enjoyed watching classic movies with the kids through Disney+ and have also played the movie Frozen II on repeat for our daughter Sloane. She loves it!

I love Pilates and anything that is stretching and sculpting- so I have a new go to work out:https://youtu.be/oKfNUOWuZV8 - We also try to stay active with the kids by riding our bikes through the local park. A new fun activity we've enjoyed has been dressing up and putting on the "Just Dance" videos, and trying to follow along. It always provides a lot of laughs!

The past couple of weeks have been far from boring! My time off has been consumed with puppies. Two days before TIVOL closed its doors, we had seven beautiful yellow Labrador puppies.  It has been a wonderful distraction and brings so much happiness to our home. We had to bottle feed one at first, so that was interesting skill to learn and stress over. However, it didn’t take long for him to quickly learn that his Momma had what he wanted!  

Other than that, I have been working and connecting with customers. I go for walks often, and am planting flowers. When we're inside, we're doing puzzles and home projects. I took down wallpaper in one room and painted it.  My daughter turns 16 this month and I’ve been trying to figure out how to make that day special with the unfortunate circumstances. She painted her room as well, and now we are trying to find a new book shelf and curtains to give it a whole new fresh look! Everyday is something new, and I'm happy we're all getting through together!

These are uncharted waters for all of us and I know we’re all just trying to figure it out day by day and cope the best way we can! There are certainly moments that have been harder than others and in those moments I will say, out loud, at least two things that I’m grateful for. Bring it all back to the positive. Stay grateful and kind.

I’ve found keeping myself busy with those projects you just never seem to have time to get to has been a mood booster! (Self-taught painter) Getting outside in the sun as much as I can and walking our two dogs always makes me feel great!! There’s something extra special about some good old fashion vitamin D! ☀️ It’s that instant feel good medicine for me. ☺️

Space Jam is now on Netflix so absolutely everyone should take advantage of that classic. I've also been out reminding myself that you never forget how to ride a bike!

I’ll share below a couple yummy recipes that are healthy and easy that Trey and I love! These both are from a woman I went to high school with who is now a nutritionist and consultant for professional athletes. Her IG is @eleatnutrition

Mexican Chicken Casserole
1lb chicken breast
1 cup brown rice
1 bell pepper diced
1 diced onion
1/2 spinach cut
2 cloves garlic minced
1 can black beans, Drained and rinsed
1 can fire roasted tomatoes, drained
1 cup plain non fat Greek yogurt
3/4 cup mozzarella cheese
1/2 cheddar cheese
2 tbsp chili powder
1/2 tsp cayenne pepper
1 tsp cumin seeds
1/2 tsp salt
1/2 tsp pepper

Preheat oven to 350
Mix in and sprinkle on top both cheeses
Bake for 15-20 minutes

Chipotle Turkey Burgers (with peach salsa)
1.25lbs lean ground turkey
3 chipotle peppers in adobo sauce, finely diced
2 tbsp onion, diced
1-2 cloves garlic, minced
1/2 Tbsp cilantro, finely diced
1/2 tbsp chili powder
1/2 tsp salt
1/2 tsp pepper

Mix all above in medium bowl and form patties! (Add more chipotle peppers or chili poster for a spicier burger)

Preheat the skillet with olive oil on med-high heat and cook each side for about 4 min each.

I serve with a chunky peach salsa. :)
